Instant Besan Dhokla

1 cup besan
1tsp citric acid or the juice of 1 lemon
1 tsp sugar; salt to taste
1 tsp soda bicarbonate
2tsp oil
2 tsps mustard seeds
4 green chillies (chopped)
Coriander leaves
1 tsp fresh coconut (grated; optional)


Mix together the besan, citric acid, sugar and salt. Add a glass of water, and mix well. Keep one vessel on the fire ready for steaming

Add soda bicarbonate to the batter. Pour this immediately onto a greased thali and steam for 10 minutes

Remove from the vessel, cool for 10 minutes and cut into squares

In the meantime heat the oil and mustard seeds, and ad the green chillies. This is the vaghar. Place dhokla in a serving plate and sprinkle over with the vaghar, coriander leaves and grated coconut

For a little variation, grind fine 1 cup of green peas and add to the batter. Prepare as you would besan dhokla. These dhokla will have a green tinge
