Mixed Vegetables



½ Potatoes
½ kg Brinjal
1 kg green peas
2 tbsp oil
A pinch of asafetida
4 green chillies (ground)
A piece of ginger (ground)
1 tblsps sugar
A pinch of red chilli powder
Salt and turmeric to taste
Fresh coconut (grated; optional)
Coriander leaves (chopped)

Wash and dice the potatoes and brinjal, and shell the peas.

Heat oil in a kadai and add the asafetida. Next add the green chillies, ginger, sugar, red chillies, salt, turmeric and Vegetables and stir briskly.Cover and simmer till done. Garnish with coriander leaves and coconut.
