Chilliman Handi Biryani By Chef Gulzar

Ingredients for Chillman Handi Biryani:

* Rice 1/2 kg
* Mutton 1/2 kg
* Yogurt 1/2 cup
* Tomato 2
* Onion 1-2
* Ginger garlic paste 1 tsp
* Green coriander 1/2 bunch
* Mint leaves 1/2 bunch
* Green chilies 4-5
* Coriander 1 tbsp
* Red chili powder 1 tsp
* Turmeric powder 1 tsp
* All spice powder 1/2 tsp
* Cumin seed 1/2 tsp
* Cumin seeds 1 tsp
* Cloves 2-3
* Cinnamon 1-2 sticks
* Bay leaves 1-2
* Big cardamom 2-3
* Small cardamom 2-3
* Kewra essence few drops
* Onion (brown) 1
* Clarified butter 1/2 cup
* Salt to taste
* Flour 400gm

Method:

1. Firstly, wash rice and soak for 2 hours.
2. Now add black pepper, boil it 1/4, strain it and keep it aside.
3. Put ghee in handi and add cinnamon, cloves, big cardamom, small cardamom, cumin and bay leaves and saute it.
4. Now add onions and fry it.
5. Then add ginger garlic paste and fry it.
6. Now add mutton and roast it well.
7. Then add 2 tomatoes and roast it.
8. Now in one mixing bowl, put yogurt and add red chili powder, coriander powder, all spice powder and salt and add in mutton and cook until tender and gravy becomes thick.
9. Put green chilies, green coriander, mint, few drops of khewra essence and brown onion, close it with kneaded flour and keep on simmer.
10. When simmer is done, take out in dish and serve.
